Holm oak of the Horn

Variety of Tuscan origin. Its name derives from its area of ​​origin: the Fattoria del Corno, in the locality of San Casciano Val di Pesa (FI). Here, it was located in 1929.

The colors of Prunicce

Black and Gold

Black like the shade of the Prunicce wood, ideal for the growth of undergrowth herbs. Gold like The sun's rays making their way through the tree branches.

Features

Appearance, taste and use

Prunicce oil is green in color with yellow shades. It is fruity (medium-intense level) with a scent of grass, artichoke and light traces of tomato, hay, straw and ripe walnut. The taste is bitter and pungent with a delicate smoothness on the lips.

Use raw

Ideal for seafood salads, fish carpaccio and bruschetta.

Traditional dishes

Excellent with ribollita, cheeses, panzanella, croutons and Tuscan fish.

Delicately flavored dishes

Recommended with raw fish and to give character to tomato puree.

Production

1.Collection

The olives are harvested before full ripening. From the centuries-old olive groves by hand, from the rows with a modern grape harvester.

2. Crushing

After the leaves have been eliminated with a defoliating machine, within 12 hours of harvesting, they are sent for hammer crushing.

3. Gramolatura

4.Conservation

After extraction and due controls, the oil is stored in small stainless steel tanks, under an inert gas atmosphere.

5. Bottling

The oil is filtered and bottled using a semi-automatic bottling machine. The bottles are then corked, labeled and kept at a controlled temperature.
